Eateries from Breck to Copper want a piece of the Dillon Tiki Bar contract 

The dockside Tiki Bar at Dillon Marina is about to welcome a new operator and some of the biggest names in Summit want a piece of it. 

Six businesses are vying for one summer contract at the Tiki Bar, beginning with the 2027 boating season. You will recognize most of them: 

  • – Eagle BBQ, a Copper slopeside staple 
  • – Fritangas Mexican Restaurant, a Silverthorne favorite 
  • – Keystone Coffee Company, also of Steep Brewing 
  • – Angry James and Burke and Riley’s Irish Pub, as a joint venture   
  • – RPW Foods LLC, registered in Centennial 

The Tiki Bar contract is a lucrative one. The winning operator claims a five-year lease at what the town calls “a prime waterfront location,” serving food and drinks as the marina’s only onsite restaurant – for now. In coming years, the town plans to build a full-service restaurant and possible events center on the lakefront. 

Town council tonight hears pitches from all six contenders during the public work session at 4:30 p.m. Council reviews the pitches at 6:35 p.m. It is unclear whether the contract will be awarded tonight. 

For many years Pug Ryan’s operated the Tiki Bar. That contract expires in November, and the brewpub has no interest in renewing. Pug Ryan’s itself could disappear in coming years, when Detroit developer Jake Porritt tears down the aging watering hole for a planned – but not yet approved – retail and apartment complex.
